Easy Taco Soup
This is a make in minutes “Easy Taco Soup”. Delicious for the whole family and an all American favorite dish.
Ingredients
16 oz. Ground Beef, 95% Lean, hamburger, 5% fat
½ to 1 packet Ranch Dressing Mix (optional)
1 oz. Taco Seasoning Packet, McCormick / Choose Mrs. DASH seasoning to lower the sodium content further
10 oz. Diced Tomatoes & Green Chilies, Rotel
15 oz. Yellow Corn, Canned, Low Sodium
2 cups Pinto Beans, Canned, Low Sodium
2 cups Black Beans, Canned, Low Sodium, mature seeds, canned
2 cups Kidney Beans, Canned, Low Sodium
24.5 oz. Diced Tomatoes, canned
Directions
- Brown the hamburger and drain the fat.
- Drain and rinse the beans and corn. Do not drain the tomatoes.
- Combine all ingredients in a pot larger than 3 quarts.
- Warm thoroughly. Simmer, stirring often, for at least 1 hour.
- Serve with shredded 2% cheese and nonfat plain Greek yogurt or a few slices of Avocado (these items are not included in the nutrient analysis).
Slow Cooker Alternative:
- Brown the hamburger and drain the fat.
- Drain and rinse the beans and corn. Do not drain the tomatoes.
- Combine all ingredients in the slow cooker.
- Cook on low for at least 4 hours.
- Serve with grated 2% cheese and nonfat plain Greek yogurt or a few slices of Avocado (these items are not included in the nutrient analysis).
*Choosing low sodium or no added salt canned items will decrease the sodium content reflected on this label.
* Choose Mrs. DASH seasoning to lower the sodium content of this recipe further.
