Ingredients:

  • 1 tbsp. olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 large carrot, chopped
  • 1 can (15 oz.) diced tomatoes, no salt added
  • 1 cup red lentils, rinsed
  • 4 cups low-sodium vegetable broth
  • 1 tsp. ground cumin
  • 1/2 tsp. ground turmeric
  • 1/4 tsp. smoked paprika
  • 1/4 tsp. cayenne pepper
  • 1 tsp. ground coriander
  • Salt and pepper, to taste
  • 1 tbsp. fresh lemon juice
  • Fresh cilantro, chopped (for garnish)
  • Plain yogurt (optional, for garnish)

Directions:

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and sauté for about 4-5 minutes, until softened. Add the garlic and carrot and cook for another 2-3 minutes until fragrant.
  2. Stir in the cumin, turmeric, paprika, cayenne pepper, and coriander. Cook for 1-2 minutes to allow the spices to bloom and coat the vegetables.
  3. Stir in the red lentils, diced tomatoes (with juices), and vegetable broth. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to low and cover the pot. Let the soup simmer for 25-30 minutes, or until the lentils are tender and the soup has thickened. Stir occasionally.
  5. Once the lentils are cooked, taste the soup and adjust the seasoning with salt, pepper, or more cayenne if you prefer additional heat. Add the fresh lemon juice (optional) to brighten up the flavors.
