Ingredients:

  • ⅓ cup chocolate chips, at least 60% dark
  • 2 large ripe avocados 
  • 3 Tbsp. unsweetened cocoa powder
  • 1/4 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1/8 teaspoon kosher salt
  • 2 tsp maple syrup

Directions:

  1. Put the chopped chocolate or chocolate chips into a microwave-safe bowl. Heat in 15-second intervals, stirring in between, and monitor closely to prevent burning. Once the chocolate is nearly melted, remove it from the microwave and stir until smooth. Let it cool until just warm.
  2. Next, halve and remove the pits from the avocados, then transfer them into a food processor or high-powered blender. Add the melted chocolate, cocoa powder, almond milk, vanilla extract, salt, and maple syrup. Blend until the mixture is smooth and creamy, pausing to scrape down the sides of the bowl as necessary. 
  3. Refrigerate for at least 2 hours or overnight for a thicker, mousse-like texture.

Tips and Tricks:

  • Use fully ripe avocados for the creamiest texture. They should be soft to the touch but not mushy. Hass avocados work best.
  • Add a pinch of salt to enhance the chocolate flavor. A splash of vanilla extract or espresso powder can deepen the taste.
  • Store in an airtight container in the fridge for up to 2-3 days. Avocado oxidizes over time, so consume it fresh for the best flavor and appearance.
