Ingredients:
- 1 tbsp. olive oil
- 1 lb. lean ground turkey or chicken
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 large bell pepper, diced
- 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
- 1 tsp. chili flakes
- 1 tsp. ground cumin
- 1/2 tsp. smoked paprika
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 cup fresh or frozen corn (thawed, if frozen)
- 1 cup black beans, rinsed and drained, no salt added
- 1/2 cup fresh salsa
- 3 cups baby spinach
- 1/4 cup chopped fresh cilantro
- 1-2 tbsp. lemon juice
Directions:
- Heat the olive oil in a large skillet over medium heat.
- Add the ground turkey or chicken and cook until browned and fully cooked. Remove from the skillet and set aside.
- In the same skillet, add the onion, garlic, and bell pepper. Cook for 3–4 minutes, stirring occasionally, until softened.
- Add the diced sweet potatoes to the skillet along with chili powder, cumin, paprika, salt, and black pepper. Stir to coat the potatoes in the spices.
- Cover and cook for 8–10 minutes, stirring occasionally, until the sweet potatoes are tender.
- Return the cooked ground turkey or chicken to the skillet.
- Stir in the corn, black beans, salsa, and spinach. Cook for an additional 3–5 minutes, stirring gently, until heated through.
- Top with fresh cilantro, fresh lemon juice and optional toppings like avocado or green onions.
