Prep Time: 5 minutes Cook Time: 25 minutes Yield 4 servings (1 serving= 1 cup)
Ingredients:
- 2 cups low sodium vegetable broth
- 1 cup dried green lentils, well rinsed
- 1 Tbsp. olive oil
- 1/2 medium yellow onion, minced
- 2 garlic cloves, minced
- 1/2 green bell pepper, diced
- pinch of sea salt and black pepper, to taste
- 1 15 oz can tomato sauce
- 1 Tbsp. maple syrup
- 2 Tbsp. Worcestershire sauce
- 1 Tbsp. chili powder
- 2 tsp. ground cumin
- 1 tsp. smoked paprika
Directions:
- In a small saucepan, add vegetable broth and rinsed green lentils. Heat over medium-high heat to a boil, then reduce to a simmer and cook covered for 18-22 minutes, or until tender. Drain off any excess liquid and set aside.
- In the meantime, heat oil over a large skillet over medium heat. Add onion, garlic, and bell pepper. Season with a pinch of salt and pepper. Sauté for 5 minutes, stirring frequently until peppers and onions are tender.
- Add tomato sauce, maple syrup, Worcestershire sauce, chili powder, cumin, and paprika. Stir to combine.
- Once the lentils are cooked, add them to the skillet and stir to combine.
- Cook mixture over medium-low heat until warmed (~5-10 minutes). Taste and adjust flavor as needed.
- Serve mixture on toasted buns or in lettuce wraps.
