Spicy Tuna Wrap with Veggies

Ingredients:
- 1 whole wheat or high-fiber tortilla (at least 4g fiber)
- 1 (5 oz.) can of tuna in water, drained
- 1 Tbsp. plain nonfat Greek yogurt
- 1 tsp. sriracha
- 1/2 tsp. lemon juice
- 1/4 tsp. garlic powder
- 1/4 tsp. smoked paprika
- 2 Tbsp. Light mayonnaise
- 1/2 cup shredded carrots
- 1/2 cup shredded cabbage
- 1/4 cup fresh spinach, chopped
- 2 Tbsp. diced cucumbers
- 1 Tbsp. chopped fresh cilantro (optional)
Directions:
- In a small bowl, mix tuna, Greek yogurt, sriracha, lemon juice, garlic powder,smoked paprika and light mayonnaise until well combined.
- Lay the tortilla flat and spread the tuna mixture evenly in the center.
- Layer shredded carrots, cabbage, spinach, and cucumbers on top of the tuna. Sprinkle with cilantro if using.
- Fold in the sides of the tortilla and roll tightly into a wrap. Slice in half and enjoy!
Tips and Tricks:
- Warm the tortilla slightly (10–15 sec in the microwave). This makes it more pliable and less likely to tear when rolling.
- Fresh herbs like parsley or dill (in place of cilantro) brighten the flavor.
- Make the tuna mix in advance. Tuna stores well for 2–3 days in the fridge.
