Ingredients:

  • 1 whole wheat or high-fiber tortilla (at least 4g fiber)
  • 1 (5 oz.) can of tuna in water, drained
  • 1 Tbsp. plain nonfat Greek yogurt
  • 1 tsp. sriracha
  • 1/2 tsp. lemon juice
  • 1/4 tsp. garlic powder
  • 1/4 tsp. smoked paprika
  • 2 Tbsp. Light mayonnaise
  • 1/2 cup shredded carrots
  • 1/2 cup shredded cabbage
  • 1/4 cup fresh spinach, chopped
  • 2 Tbsp. diced cucumbers
  • 1 Tbsp. chopped fresh cilantro (optional)

Directions:

  1. In a small bowl, mix tuna, Greek yogurt, sriracha, lemon juice, garlic powder,smoked paprika and light mayonnaise until well combined.
  2. Lay the tortilla flat and spread the tuna mixture evenly in the center.
  3. Layer shredded carrots, cabbage, spinach, and cucumbers on top of the tuna. Sprinkle with cilantro if using.
  4. Fold in the sides of the tortilla and roll tightly into a wrap. Slice in half and enjoy!

Tips and Tricks:

  • Warm the tortilla slightly (10–15 sec in the microwave). This makes it more pliable and less likely to tear when rolling.
  • Fresh herbs like parsley or dill (in place of cilantro) brighten the flavor.
  • Make the tuna mix in advance. Tuna stores well for 2–3 days in the fridge.
